Ibiza wines: between ancient & modern

The production of wines and spirits in Ibiza has a very important role, and mixes ancient and modern techniques. Many ibizan wines are currently considered of protected origin. Also the liquor tradition is combined with modernity, think about the origin of liqueurs produced here as Hierbas, the Frigòla and Palo were the ancient herbal preparations, which centuries ago were used during periods of severe infectious diseases. It was prepared to macerate in the anise that gave life to very fragrant liquors. The Frigòla is a liqueur with thyme, usually served with ice and popular not only in Ibiza but also in the other Balearic islands. The Hierbas is a distilled liquor made with 18 different types of herbs, including mint and lemon it, is a bit ‘strong but a must try. There are two versions of this liquor, the dry and the sweet, however, both are particularly suitable for the digestion. Finally the Palo, also an aromatic liqueur, originally from Mallorca, which spread even to Ibiza. To produce this liquor using gentian, sugar is added to give a softer flavor. This liquor, preferably accompanied by ice, is excellent as an aperitif or cocktail.
